- 1/4 cup freshly grated Parmesan, plus more for serving
- 1/4 cup fresh flat-leaf parsley, finely chopped, plus more for serving
- 1 large egg, beaten
- 1 tsp dried oregano
- 1/2 tsp crushed red pepper flakes
- Kosher salt and freshly ground black pepper to taste
For the Sauce
- 1 can (28 oz) crushed tomatoes
- 1 tsp granulated sugar
- Reserved garlic, oregano, and red pepper flakes from above
Directions
Make the Meatballs
- Preheat your oven to 425°F (220°C). Line a large baking sheet with foil and rub with 2 tablespoons of the olive oil.
- In a large bowl, combine the ground turkey, ricotta, 3 of the minced garlic cloves, Parmesan, parsley, and beaten egg. Season with salt and pepper. Mix until just combined — do not overwork the mixture or the meatballs will become dense.
- Form into 16 equal meatballs and place on the prepared baking sheet. Bake for 20 to 25 minutes, until golden and firm to the touch.
Make the Sauce
- While the meatballs bake, heat the remaining tablespoon of olive oil in a large pot over medium heat.
- Add the remaining 3 cloves of minced garlic, oregano, and crushed red pepper flakes. Cook for about 1 minute until fragrant.
- Add the crushed tomatoes and sugar. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add the baked meatballs to the sauce and simmer together for another 10 minutes to let the flavors come together.
- Serve warm, garnished with additional Parmesan and fresh parsley.
Serving Suggestions
Serve these meatballs over whole wheat spaghetti or zucchini noodles for a lower-carb option. They also work well in a whole-grain hoagie roll.
