Ingredients
- 1 lb ground turkey breast
- 1 large egg
- ½ cup whole wheat panko breadcrumbs
- ¼ cup chopped fresh cilantro
- 2 garlic cloves, grated, divided
- 1 tsp fresh ginger, grated
- 1 tsp toasted sesame oil
- 1 tbsp low-sodium soy sauce
- 3 tbsp honey
- 2 tbsp rice vinegar
- 1 tsp red pepper flakes, or to taste
- Juice of 1 lime
Directions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a large bowl, combine the ground turkey, egg, breadcrumbs, cilantro, half the garlic, ginger, sesame oil, and soy sauce. Mix gently until just combined.
- Scoop the mixture into 1.5-tablespoon portions and roll into smooth balls. Place at least 1 inch apart on the prepared baking sheet.
- Bake for 15 to 18 minutes, or until the internal temperature reaches 165°F.
- While the meatballs bake, combine the honey, rice vinegar, red pepper flakes, remaining garlic, and lime juice in a small saucepan. Simmer over medium-low heat for 3 to 4 minutes, until slightly thickened.
- Toss the hot meatballs in the warm glaze until evenly coated.
- Garnish with extra cilantro and serve warm.
