  • 4 large portobello mushroom caps, stems removed
  • Olive oil cooking spray
  • 4 thin slices red onion
  • 8 slices whole grain bread (choose a loaf under 150 mg sodium per slice, whole wheat flour listed first)
  • 4 thin slices low-fat Swiss cheese (check sodium on your specific brand)
  • 2 jarred roasted red peppers, drained, rinsed, and sliced — or 2 fresh red peppers, roasted directly
  • 4 slices tomato
  • 4 fresh basil leaves

 

For the Dijon balsamic vinaigrette:

  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 3 tablespoons chopped fresh basil
  • 1 scallion, white part and 1 inch of green, finely chopped
  • 1/8 teaspoon garlic powder
  • Freshly ground black pepper to taste

 

For the balsamic mayonnaise:

  • 1 tablespoon light mayonnaise (under 90 mg sodium per tablespoon)
  • 2 teaspoons balsamic vinegar
  • 1 teaspoon Dijon mustard

 

Directions

Preheat the oven to 450 degrees Fahrenheit.

Whisk the vinaigrette ingredients together in a small bowl. Brush the mushroom caps on both sides with the vinaigrette. Let them marinate for 15 minutes.

Coat the marinated mushrooms and the onion slices lightly with olive oil cooking spray. Roast in the oven for 12 to 15 minutes, until cooked through and beginning to brown at the edges. Check them at 10 minutes. Portobellos release significant moisture during cooking. Blot the caps dry with a paper towel after roasting to prevent soggy bread.

Toast the bread slices lightly. Spray lightly with olive oil cooking spray before toasting if preferred.

Whisk the balsamic mayonnaise ingredients together until fully blended. Spread a thin layer on four of the toast slices.

Place a slice of cheese on the four mayonnaise-spread slices. Layer with a mushroom cap, onion slices, roasted red pepper strips, a tomato slice, and a basil leaf. Cap with the remaining bread slices and serve immediately.

 

Variation: Skip the bread and serve the roasted portobello cap and toppings over a bed of arugula with the vinaigrette drizzled over the top. This removes the sodium variable from the bread entirely and adds a peppery, mineral-rich green to the plate.

Make-ahead: The vinaigrette and balsamic mayonnaise both keep well covered in the refrigerator for up to three days. Marinate and roast the mushrooms fresh to order.
