For the patties:

  • 1 lb ground turkey breast (leanest option — avoid “ground turkey” blends that include dark meat and skin)
  • 1 egg or 1/4 cup egg substitute
  • 1/4 cup unseasoned panko breadcrumbs (lower sodium than standard dry breadcrumbs)
  • 1 teaspoon homemade Thai seasoning: 1 tsp garlic powder, 1/2 tsp coriander, 1/2 tsp cumin, 1/4 tsp black pepper — mix and use 1 tsp of the blend
  • 2 cloves garlic, minced
  • 6 whole grain hamburger buns (choose buns under 150 mg sodium per serving)
  • 3/4 cup fresh basil leaves
  • 1 medium mango, peeled and sliced

 

For the homemade peanut sauce:

  • 3 tablespoons natural peanut butter (no added salt or sugar)
  • 1 tablespoon coconut aminos (replaces soy sauce — significantly lower sodium)
  • Juice of 1 lime
  • 1 teaspoon fresh ginger, grated
  • 1 clove garlic, minced
  • 1 to 2 tablespoons water to thin to a drizzle consistency

 

Directions

Combine egg or egg substitute, panko, and the homemade Thai seasoning blend in a medium bowl. Add the minced garlic and ground turkey breast. Mix until just combined. Overmixing makes the patties dense. Shape into six patties roughly three-quarter inch thick.

Whisk the peanut sauce ingredients together in a small bowl. Add water one tablespoon at a time until it reaches a consistency that drizzles easily. Taste and adjust lime or ginger to preference. Set aside.

Grill the patties over medium heat on a lightly oiled rack, uncovered, for 14 to 18 minutes, turning once halfway through. Cook to an internal temperature of 165 degrees Fahrenheit. Turkey carries food safety risks at lower temperatures, so use a meat thermometer.

Toast the whole grain buns lightly if preferred. Layer the bottom half of each bun with fresh basil leaves. Add the patty. Drizzle with peanut sauce and top with mango slices. Cap with the bun top.

 

Variation: Serve the patties lettuce-wrapped instead of on a bun to further reduce sodium and add a fresh crunch. Bibb or butter lettuce works well.
